OCR: Thawing DOUGH BALLS Overnight: Thaw dough out of case; pan on clean, oiled sheet pans. Cover dough with oiled plastic to prevent crusting on surface during thawing, then refrigerate overnight. Allow thawed dought to set covered at room temperature 30-60 minutes until it reaches room temperature (65-75F). Same Day: Cover and thaw at room temperature for approximately 2-4 hours (small dough balls thaw faster than large ones). SHEETED DOUGH Overnight: Remove products needed from case, leaving wax paper intact. Place on sheet pans and cover with oiled plastic to prevent drying. Refrigerate overnight. Place thawed dough sheets on oiled pizza pans. Note: Product may also be thawed in the case, under refigeration (can be held for 2-3 days). Same Day: Remove products needed from case, remove wax paper and place on oiled pizza pan. Cover and thaw at room temperature for approximately 2-4 hours. Note: You may spray wax paper with pan release and use as a cover to prevent drying. PAR - BAKED & PANOLI Remove desired number of crusts from case and place on pans. Cover with plastic and let thaw 15-30 minutes at room temperature.
